Chicken fajitas are simple to prepare and have an incredible flavor. This 30-minute meal is ideal for a weeknight!

Because I prepare chicken meals frequently for my family, I’m constantly on the hunt for new ways to spice up chicken. One method is to draw inspiration from other cuisines and their unique flavors.
The ingredients in these simple chicken fajitas amp up the heat! This is a favorite weeknight dish of mine, and it’s simple to prepare, delicious, and — perhaps most importantly – quick to prepare.
Recipe ingredients
Fajitas:
- Thinly sliced 2-pound boneless skinless chicken breast
- Three medium bell peppers, sliced thinly (or 1 pound frozen sliced peppers)
- One medium onion sliced
- 2 tsp avocado oil
Seasoning blend:
- ½ teaspoon crushed red pepper
- 2 tsp chili powder
- One teaspoon smoked paprika
- 1 tsp coarse sea salt
- ¼ tsp black pepper
- ½ teaspoon oregano, dry
- One teaspoon powdered garlic
If you want a thicker sauce, use these as well:
- 1 ½ tbsp cold water
- 1 tsp cornstarch
Cooking instructions
Combine the seasoning ingredients in a small bowl. They may be divided in half and combined in two separate bowls if needed. You will use half to season the vegetables and half to season the chicken.
In a large, deep skillet, warm 1 tsp of the oil over medium-high heat for about 2 minutes. Combine the bell peppers, onions, and half of the spice mix in a medium bowl. Cook, often mixing, until the vegetables are barely soft, for approximately 5 minutes. If the bottom of the skillet becomes very dry, add a tablespoon of water at a time. Additionally, you may reduce the heat to medium.
Transfer the veggies to a dish using a slotted spoon. Add the rest of the oil to the skillet; then, the chicken pieces are seasoned with the remaining ingredients. Stir-fry for approximately 4 minutes, or until the chicken is almost entirely done. Meanwhile, if the base of the skillet has become too dry throughout the chicken cooking process, add a splash of water.
Reduce the heat to low and add the veggies back to the skillet. Stir-fry everything together for a further 1-2 minutes, or until the chicken is cooked through and the dish is well heated.
At this stage, you can add a cornstarch mixture – 1 tablespoon cornstarch to 12 tablespoons cold water – to the cooking liquids. However, this is entirely optional. This step is only necessary if you’re using frozen bell peppers, as they exude water into the meal.
If desired, serve the fajitas in bowls drizzled with pan juices and topped with guacamole, sour cream, salsa, and/or shredded cheddar cheese.
Additionally, they can be spooned onto heated tortillas or served in lettuce cups.
Recipe variations
Experiment with your seasonings! Along with the alternatives provided, onion powder and dried thyme are beautiful accents.
To marinate the chicken, combine half of the spices with a tablespoon of olive oil and a teaspoon of lime juice in a small bowl. Place the chicken strips in a resealable bag and pour the marinade, coating the chicken well. Seal and marinate in the refrigerator for 2 hours.

Storage instructions
The leftovers should preserve for 3-4 days in the refrigerator, sealed in an airtight container. Gently reheat them, closed, in the microwave on 50% power.
The chicken tends to dry out little when warmed, but the leftovers are still excellent and tasty.
