Recipe ingredients
- 1 pound chicken breast halves, skinless and boneless – cubed
- 1/3 cups of butter
- 1/2 cup celery, sliced
- 1/3 cup onion, chopped
- 2 unbaked pie crusts (9 inches)
- 1 cup carrots, sliced
- 1/2 tsp salt
- 1 cup frozen peas, green
- 1/4 tsp celery seed
- 1/4 tsp. black pepper
- 2/3 cups of milk
- 1/3 cup unbleached all-purpose flour
- 1 3/4 cups of chicken broth
Cooking instructions
Step 1: Preheat oven to 425°F (220°C.)
Step 2: Combine chicken, carrots, peas and celery in a saucepan. Cover with water and bring to a boil for 15 minutes. Take the pan off the heat, drain it and set it aside.
Step 3: Cook onions in butter in a saucepan over medium heat until tender and transparent. Combine salt, pepper, flour, and celery seed in a medium bowl. Stir in chicken broth and milk in a slow, steady stream, then simmer until thickened over medium-low heat. Take the pan off the heat and set it aside.
Step 4: Fill the bottom pie shell halfway with the chicken mixture, and distribute the heated liquid mixture evenly. Cover with top crust, crimp the edges and trim away any extra dough. Create numerous tiny openings on the top to vent steam.
Step 5: Bake for 30–35 minutes, or until the dough is golden brown and the filling is bubbling. Allow 10 minutes to cool before serving.

Mushroom pot pie
To make the ultimate mushroom pot pie, start by sautéing the chopped onion in a pan with olive oil. Then add in mushrooms and celery to take on their golden deliciousness. When that’s finished cooking, you can stir them into the mixture for about five minutes until they become fully cooked before adding in your other ingredients like thyme leaves, flour, or cornstarch mixed with water or broth (depending upon how thick you want it) then mix well.
Vegetable pot pie
Start by sautéing the onion in a pan with olive oil. Then add celery and carrot pieces into the mixture before stirring them together for about five minutes until they become fully cooked through. Keep adding your other vegetables, like peas or zucchini, to finish cooking it all up after that time is over.
Red wine
